Cane pruning "Guyot" done by hand for better aeration and sun exposition, vines trellised vertically on 4 wires, topping 3 to 4 times to prevent plant depletion, mechanical plowing and weeding (no synthetic product), organic manure, biodiversity by replanting trees and plants to complement and reenforce natural defenses (uses of four leaves clover), organic farming techniques. Mechanical harvest.
Mechanical harvest, grapes are destemmed then pressed as to extract the juice. The juice is placed in a thermo regulated Stainless steel tank at low temperature for hours, and then we clear the juice by settling; particles go down to the bottom of the tank, then we take them out. The alcoholic fermentation can start, the yeast eat all the sugar as to create alcohol. All steps uses nitrogen in order to keep freshness and lower the amount of sulfites.

The year 2020 is marked by an early maturity and intense flavors. The 2019 Fall season was rainy and helped replenishing the soil with water. Winter was very warm (hotter February since 2001) and lead to an early sprout of the vines in March. This was a very stressful time, with a high exposition to frostbite and hail. In the end, these natural catastrophes did not occur. Then, Spring started with a low level of welcomed rains: enough to help the plants rehydrate. Nevertheless, by the end of June, the buds started to sprout. An early maturity unwelcomed at this time of the year: it exposes the buds to mildew (fungus). Unfortunately, the rains picked up and the work was harder in the vineyard. The vintners’ focus was on preventing the fungus to spread. Fortunately, May and June were warm: it made the rest of the season easier. The harvests were very early (almost 2 weeks prior to the usual). The fruits were of a high quality with a lower yield: it is a sign of a high concentration of aromas. The quality is very high for this Rose 2020 vintage.
