An elegant crystal color. Scents are progressive like the Bolero de Ravel, opening slowly on fresh hay, pear and and chalk. A vivid, intnse and refreshing minerality paired with a blalnced acidity. A complex, yet elegant wine, for wine enthusiast seeking a fantastic and refined experience. Natural yeast. Vegan wine: using tangential filtration. A fantastic price for a wine sold $39 average in the US.

2016 was a very challenging vintage for Chablis. The winter was very warm (last time was in 1900). It didn't allowed the plant to rest much. The flowers appears early. Unfortunatly, it snowed the 26th of April. The frost took away a good porting of the buds. It was then followed by heavy humid temperature that creates conditions for fungus such as Mildiou to appears. That took away another portion of clusters. Luckely, the connsistent warm summer brought to a natural concentration what was left. A vintage were quality privailed over quantity.
