Certified HVE. Mechanical plowing, both mechanical and hand pruning so are the harvest, oragnic treatments, no synthetic product, biodiversity, sustainable agriculture.
After destmming the grapes and pressing them, each plots' juice is separated for the alcoholic fermentation (14 days) done with the natural indigineous yeast. Then, for 2-3 month of Malo lactic fermentation, the juices are put in concrete vats to preserve each terroir and flavors. Syrah from the Beaumont-Monteux and Pont-de-léIsére parcels, reveals aromas of liquorice. Syrah from Mercurol brings the aromatic expression of red and black fruit. Aged after that for 12 month in neutral barrels, they juices are finally assembled before bottling.

2015 was an ideal vintage in Cétes du Rhône. Winter was cold enough to let the plant rest. The spring didn't present any threat to the buds and flowers thanks to a cool and low hidity climate. The summer was warm and each parcel matured at their own different pace. This set up perfect condition for the harvest where each parcel could be harvested over time instead of in a rush.

3 different parcels. In the 2 Southern-most vineyards of Beaumont-Monteux and Pont-de-léIsére, vines are fed by stony, calcareous-clay soil, with some large pebbles thrown up by the Rhône river. The plots of Mercurol, on the more central édes Chéssisé plateau, contain regular-sized pebbles in calcareous-clay soil.
