Then, for 2-3 month of Malo lactic fermentation, the juices are put in concrete vats to preserve each terroir and flavors. Syrah from the Beaumont-Monteux and Pont-de-léIsére parcels, reveals aromas of liquorice. Syrah from Mercurol brings the aromatic expression of red and black fruit. 2015 was an ideal vintage in Cétes du Rhône. Winter was cold enough to let the plant rest. The spring didn't present any threat to the buds and flowers thanks to a cool and low hidity climate. The summer was warm and each parcel matured at their own different pace. This set up perfect condition for the harvest where each parcel could be harvested over time instead of in a rush.
