Cane pruning "Guyot" done by hand for better aeration and sun exposition, vines trellised vertically on 4 wires, topping 3 to 4 times to prevent plant depletion, mechanical plowing and weeding (no synthetic product), organic manure, biodiversity by replanting trees and plants to complement and reenforce natural defenses (uses of four leaves clover), organic farming techniques. Mechanical harvest.
Mechanical harvest, grapes are destemmed then pressed as to extract the juice. The juice is placed in a thermo regulated Stainless steel tank at low temperature for hours, and then we clear the juice by settling; particles go down to the bottom of the tank, then we take them out. The alcoholic fermentation can start, the yeast eat all the sugar as to create alcohol. All steps uses nitrogen in order to keep freshness and lower the amount of sulfites.

Winter 2024/2025 in Saint-Chaptes started with regular rainfall and relatively mild temperatures, restoring soil water reserves after several warm and dry years in the Cévennes corridor. Budbreak occurred at a balanced pace under stable spring conditions, with limited frost pressure and good vegetative development. Early summer brought alternating warm days and cooler nocturnal airflow descending from the Cévennes foothills, helping preserve acidity in the grapes destined for rosé production. Rain events remained moderate and well distributed, avoiding major hydric stress while maintaining steady vine metabolism through véraison. July and August were warm but without prolonged heat peaks, allowing gradual aromatic accumulation rather than rapid sugar concentration. Disease pressure stayed technically manageable due to the dry mistral episodes and the naturally ventilated environment around Saint-Chaptes. Harvest decisions focused on freshness and phenolic precision, with early morning picking widely favored to retain tension and aromatic purity. The resulting rosé wines show pale color intensity, crisp acidity and a profile centered on citrus, white peach and small red berries rather than tropical expression. Alcohol levels remained controlled, textures are linear and saline, and the vintage overall reflects balance, drinkability and Mediterranean freshness with clear Cévennes influence.
