A vintage where we select the chardonnays that compose it for their fruity, their sweetness, their airy greed, to which we add a very controlled proportions of Pinot Noir vinified in red, to come sublimate the character of the Chardonnays. This cuvée is greedy, fruity with a lot of sweetness, to offer you a different vision of the wines of the house. It is a wine that allows a lot of originality in cooking and that we work with a generous dosage but without excess. Vegan wine. Only sold by Celerier's Cellar in the USA.

Recoltant-Manipulant (RM), can only produce Champagne with fruit sourced from their vineyard. Winter pruning in November after previous harvest entirely done by hand. Fixing the branch on iron wire for the Winter resting time. When plant is active again, disbudding for better aeration and better quality yield. Sexual confusion: pheromone are released, preventing insects to mate, it averts the need of insecticide product (organic method). Once vegetation is grown, stripping the leaf on one side exposed to the rising sun to reduce and cancel the use of synthetic product (natural aeration optimized). 3 weeks prior harvest, tests with samples to get sugar/acidity/aromas content of each parcels to define the course of harvests on each parcels. Full cluster pressed in a pneumatic press, Desaultel Cuiret created their own technique to reduce sulphites exposition to an extreme minimum,Alcoholic fermentation at 15° for 10 days average, malolactic fermentationtion on all cuvee at 20° for 2 month average. All cuvee are fermented in stainless steel tank. Blend in Pinot noir red wine from their Grand Cru parcel planted with Pinot Noir. Aged on the lees for an extra 18 month.

Blend of 2018 and 2019. 2018 winter was very humid and slightly warmer than usual. It helped the soil to replenish its water reserve. February and March were cold and allowed the plants to finally rest. When April came, it brought storms that overall affected the region throughout July. The Desautels were lucky enough to not be fully exposed and had very limited losses. Summer 2018, especially August, was historically hot, with consistent drought. The water reserves were high enough to sustain this challenge. 2019 winter was warm and did not help replenish the water reserve due to a low level of rain. Spring orchestrated 3 frost waves, starting in April, ending early May. Due to the plant being exhausted, the vines were a bit late and that helped preventing any major disaster. The rest of Spring a lot of rains and temperature with high fluctuation. The Desautels were able to keep under control the Mildew, and the water was necessary to give the vines resources for maturing their fruits. Like 2018, Summer 2019 was hot, dry, and lasting. It led to a consistent drought. Great to ripe the fruits, but hard on the yield. An excellent vintage, with a lower volume.
