Certified HVE, mechanical plowing on 1 row out of 2 to stress the vines to grow their roots in deeper layers of sediments. No weedkiller. Biodiversity. Sustainable agriculture with little intervention, completely adapted to each vintage. Use of only organic compounds. Pruning by hand, harvest done by hand and mechanical.
Destemmed, mechanical selection followed by a second one done by hand, skin contact maceration, cold static settling, cold fermentation at 18ôC, racking at the end of maceration and resuspending the lees, 6 month aging on the lees, fermentation in stainless steel tank for maximum freshness and rippened orchard fruit flavors.

2021 was a very challenging vintage. The winter and spring were very wet. The consistent humidity set up the conditions for potential disease. Due to their reactivity, Chateau des Matards was able to perfectly handle the situation. They prevented spreads of any contamination by working diligently in the vineyard. The early summer did not change from the previous seasons, while the later part of it was dry and hot, showing even signs of water shortage. Irregular conditions, very technical vintage where only seasoned wine grower were able to achieve quality, by expressing the balanced acidity of their wine. Lucky us, Chateau Matards is one of them!
