Alcoholic and Malo lactic fermentation in temperature controlled stainless steel tank for 15 month. Aged an extra 15 month in neutral french oak barrel. Racking. Tartaric stabilization. Tangential filtration.
2018: Winter brought an important amount of rains that helped the plants to restore their hydraulic reserves. Then, an ideal Spring set up the stage for promissing a harvest: plants, buds and fruits mature at their own natural pace. Summer is dry and warm, it kept naturally away any desease / fungus. The rainy winter ended up being the key to produce such a fantastic vintage: the plant had enough water stored to go trough the "over dry" summer season. A fanstic wine that express the full potential of its terroirs.
