Certified HVE and Terra Vitis. In process of getting their Organic certification. Pruning and harvests done by hand and mechanical. Sustainable agriculture.
Traditionally, in vats, for 3 weeks, with multiple little pump over. Controlled temperature between 28- 30°C. Malolactic fermentation in vat on its lees (bâtonnage). Maturation: 12 or 14 months in oak barrels (2 to 5 wines old).

Cahors
Winter 2018/19 was slightly warmer than the average. Unfortunately, Cahors was hit by frostbite in April, affecting half of the vineyard. Chateau Nozieres did intensive works to select and optimize parcels that were left. Karma was on the side of their Ambroise de l’Her cuvee: its parcels were not affected, and Olivier was able to bring forth the best of it. Summer (July and August) brought heat waves, and consequently drought, which, in this case, was welcomed to balance out Spring’s problematics. Some light rain, at the end of August / early September 2019, allowed a light, and necessary, dilution of the alcohol, to provide elegance and sophistication. An outstanding vintage, quality driven with fantastic balance.
