Certified HVE. Plowing, pruning and harvest done by hand. Consistent yield control by pruning off unnsatisfying cluster to concentrate nutriments for better quality. Minimal to no sysnthetic product with goal to stop them. Biodiversty.
Hand-harvested, 100% de-stemmed, 2-3 days cold maceration pre-fermentation into stainless steel open vats, natural Alcoholic fermentation with indigenous yeast for 4-5 days with one light pumping over and a daily cap pushing (altogether 10 to 15 days depending of vintage). Free run and press wine blended for sttling. Removal of a majority of marc before barreling to start the malolactic fermentation. Use of 30% new French oak barrel and 70% 1-2 wine French oak barrel for 12 month.

After multiple warm/hot vintage, 2021 brought back “cooler” conditions to create a very typical Burgundy Vintage for Domaine Deliance. After a terrible start in the Spring (April) when 40% of vineyards were hit by frostbite, the cooler summer was ideal to let the minerality of the terroir shine. While 2021 was overall a vintage that won’t be remembered in France, the Southern exposition of Clos de la Servoisine brought a consistent source of light and mild temperature to allow an extremely well balanced wine. A niche vintage, for true Burgundy wine lover!
