Cherry red color, with hints of ruby. Scents of cherry, blackcurrant and wild red berries, with touches of licorice and pepper. Smooth and forthright flavors of fleshy and crisp fruit, nice structured tannins. Natural yeast. Vegan wine, produced on the principles of Biodynamic process. Only 150 cases produced. Sustainable farming. Fully hand pruned and harvested
25 to 50% full cluster. Use of small amount dry ice to prevent oxydation through the process of Alcoholic fermentation. this first step is done done in stainless steel opened vat. All fermentations are natural with indigeneous yeast. Feet pigeage everyday with light remontage. Malo lactic fermentation in Oak barrel for 2-3 months and aged an extra 15 to 18 months in it.
2017 in Burgundy was an ideal vintage. Early blooming, spring brought the right amount of humidity without excess. A Warm and dry summer without excess either. Harvest by hand early thanks to an early maturity of the fruits. A rare vintage that can be both consumed now and chave a long aging potential thanks to the ideal level of acidity.
