Domaine Stephane Guillemin
The Domaine :
The estate is located in the south of Burgundy in the village of Clessé, in the heart of the Viré-Clessé appellation which is classified in the Grands Crus of Burgundy.
Its roots are Lucie and Stephane Guillemin, both passionate and dedicated to their Domaine. Lucie is part of a lineage of vintner from the famous village of Pouilly-Fuissé. Her family owns and operates their property since 1835. Stéphane discovered at a young age that he was meant to farm. While studying at the wine school of Mâcon-Davayé, he found his vocation and a true passion for the wine industry and the life on a vineyard. After graduating, he worked with Lucie’s father, Denis DUTRON, for a year in 2001/2002. After learning from a prestigious historical vineyard, he set himself to the challenge of opening his own Domaine.
In November 2003, Stéphane purchased 5.50 hectares of vines (13.5 acres) in the cooperative cellar. The previous owner, Maurice Côte, farmed his estate with the sole objective to sell grapes to the cooperative. He achieved that while applying sustainable techniques and was recognized in the village for it. There was no cellar nor bottle production. Stépane’s challenge was to build up the entire infrastructure for his project. In 2007, his vinification/bottling building is built and the Domaine designation was created. Stéphane’s first wine was a Viré-Clessé harvest (winemaking of 0.50 hectares of vines). Then the estate expanded with the acquisition of new parcels, the withdrawal of the vines from the cooperative cellar and the installation of his wife Lucie in 2009. They operate now 24 hectares (60 acres) of vines in the communes of Clessé, Viré, Péronne and Verzé. They produce wine from various prestigious terroirs in appellations such as: Viré-Clessé, Mâcon-Péronne, Mâcon-Verzé, Mâcon-Villages, Crémant de Bourgogne and Burgundy red Pinot Noir.
The Philoophie :
“Being self-sufficient in making an eco-friendly, terroir driven wine line-up” sums up their thought process. From the beginning, Stéphane imposed himself high standards through thorough farming technique: plowing the soil, diligent rigorous pruning and cares, organic treatments, sustainable certification (HVE), all for the sake of laying down the stage for vinifying wine that translate their terroir to their utmost. All their updated equipment and machineries allows them to work more efficiently and with better respect for the environment. Their minimal intervention in the cellar (only one pump over in the beginning of fermentation, then the Chardonnay rest on its fine lees without any human interaction until it is ready to be bottled) provide the best conditions for their wine to keep intact the terroir’s minerality. Stéphane combines tradition with modern techniques: stainless steel pneumatic press, air-conditioned cellar, winemaking and aging in stainless steel tanks, in epoxy tanks, in vats enamel and egg cement all thermo-regulated.
Even though their history as a Domaine is recent, their personal and estate histories go deep back in time (some vines are over 100 years old).In the short window, Domaine Creusserome acquired many prizes and was granted the HVE certification as a testimony of their sustainable way of making wine.
