Certified HVE, mechanical plowing on 1 row out of 2 to stress the vines to grow their roots in deeper layers of sediments. No weedkiller. Biodiversity. Sustainable agriculture with little intervention, completely adapted to each vintage. Use of only organic compounds. Pruning by hand, harvest done by hand and mechanical.
Selection of the best clusters. Full cluster, mechanical selection followed by a second one done by hand, skin contact maceration, cold static settling, cold fermentation at 18°C, racking at the end of maceration and re-suspending the lees, 12 to 18 month aging on the lees, fermentation in stainless steel tank for maximum freshness and ripened orchard fruit flavors. Aging in new French oak barrels for 18 month.

2021 was a challenging vintage for France. In this region, the dry winter setup good conditions for the winter pruning and plowing in March. Unfortunately, April brought multiple episodes of frostbite, burning the buds and preventing the sap from reaching the twigs. 70% of the yield was lost, primarily affecting the white varietals (red one’s maturity is always later in the season). Nevertheless, the grapes left were of good quality, since there were less clusters to share the nutrients.

Sandy gravel soil, oceanic climate with high igrometrie yet with very good airing. Excellent conditions for Sauvignon blanc with strong aromatics.
