Impressive experience granted by this wine. An intense bouquets of never-ending scents of stone, yellow and orchard fruits punctuated by evolving spices and white flowers. Immersive yet not overwhelming. The flavors are so present, it satiates your hunger as if you were eating stone, yellow and orchard fruits, both fresh and cooked in spices without omitting a delightful refreshing cleansing acidity, signature to all Martin's white wine. The latter does not know when he will release another vintage of this wine and it would be sad to miss the opportunity to either savor or age this Nectar Sauvage in your cellar. Natural fermentation. Only 25 cases produced. All bottled are numbered. Only sold by Celerier's Cellar in the USA.

HVE Certified. Sustainable agriculture. Inputs on vines sigificantly under requirements. Plowing and mowing done mechanically and by hand. Guyot pruning technic. Vines are set on stakes. Every labor is done by hand. Disbudding in May, tiyng up the vines in May and June, trimming in June and early July to let the sun work on the fruits. It limits the retention of humidity and prevent against fungus and diseases (Mildiou, Oidium, Black Rot, Botrytis). Harvest entirely done by hand
Full cluster pressed. Settling for 24 hour in stainless stell tank at 8ôC. Alcoholic fermentation with indigineous yeast in french oak barrel for 100 days. Full Malo lactic fermentation, aging on the lees for 18 months.

A very warm spring and summer brought the maturity of the fruits to 20 days earlier than average vintage. It was a fantastic vintage yet Martin stayed alert during the vinifications. The biggest stress was to look after the fermentation so they don't stop. Multiple control per days for Alocholic and Malo lactic fermentation. Finaly, an extra ordinary vintage bottled in May 2018. Selection of the best plot. only 2 barrels released. Available only on exceptional vintage.
