Certified HVE. Pruning and harvests done by hand. No weedkillers. Plowing by hand. Natural control of the yield to guarantee quality. Sexual confusion of the plant. Sustainable agriculture.
Full clusters compacted by pneumatic press. Settling by static process for 24 hours.Natural fermentation with indigeneous yeast. Alcoholic and Malo lactic fermentation in temperature controlled stainless steel tank for 15 month. Racking. Tartaric stabilization. Tangential filtration.

2016 was a very challenging vintage for Chablis. The winter was very warm (last time was in 1900). It didn't allowed the plant to rest much. The flowers appears early. Unfortunatly, it snowed the 26th of April. The frost took away a good porting of the buds. It was then followed by heavy humid temperature that creates conditions for fungus such as Mildiou to appears. That took away another portion of clusters. Luckely, the connsistent warm summer brought to a natural concentration what was left. A vintage were quality privailed over quantity.
