This Cuvee represents the very essence of Pinot Noir Burgundy. The scents reveals delicate notes of red fruits along with fresh vegetal touch of blackcurrant fruit and violet flowers. On the palate, the tannins are moderate, and the crunch of the fruit dominates. The experience is delicate, velvety, elegant, and lingering. The beauty of Burgundy in a nutshell! Natural yeast. Vegan wine, produced on the principles of Biodynamic process. Only 300 cases were produced. Only Celerier's Cellar sells this wine in the USA.

The farming of the two plots is certified Organic by France standards. The soil is plowed during the Spring-Summer season to avoid competition from the grass. In Winter, the grass is left throughout the off-season to allow the soil to regenerate and live.
This cuvee is fully destemmed. Use of small amount dry ice to prevent oxydation through the process of Alcoholic fermentation. this first step is done done in stainless steel opened vat. All fermentations are natural with indigeneous yeast. Feet pigeage everyday with light remontage. Malo lactic fermentation in French Oak barrel for 2-3 months and aged for a total of 16 month. No new oak barrel.

2020 was very similar to both 2018 and 2019. The warm Winter prevented the soil to refill enough moist and set up the stage for a dry spring. Coming May, a lasting drought took place, followed by a very hot and dry weather in June. This created an opposite effect on the plant that went dormant due to exhaustion, stopping the maturing of the fruits. It resulted with problematic tannins, that stopped maturing while it started so well early in the season. 30% to 40% yield was lost, but the quality was very high. Although the thick skin could have been a real problematic for other vintners, Arnaud applied his signature finesse technique to make sure that he brings forth complexity and the terroirs, instead of a simplistically heavy approach.

This wine comes from selected plots, grown in narrow vines. Geologically, the 2 plots rest on a limestone slab dating from the Jurassic. The upper layer is made of clay-limestone.
