Certified HVE. Tye up vines in fall, Guyot simple arched pruning in winter starting November, mechanical plowing in Vire Clessô, gass maintain between each row to stress roots to grow deeper, putting back dirt that was drained down the hillside, reset wire and stakes, plowing (April May), non systematic preventive organic treatments in Spring (very low dosage Bordeaux mixture), debudding for optimizing yield quality, trimming of the top (non systematic), leave the leaves to prevent grappes from overheat, mechanical harvest.
Fully destemmed and pressed, clarification and settling by gravity for 12 hours, only and single pump over then put in stainless steel tank for alcoholic fermentation at 20Cô max for 2 month (very long), systematic Malolactic fermentation for 3 weeks, rest on fine lees for 10 month average, blending, earth filtration (diatoms), Vegan filtered.

Winter 2019/20 was warm and did not allow the plant to fully rest nor the soil to replenish entirely its water reserve. April being warm and dry, maturity happened early, exposing the flowers to potential frostbite hazards. Fortunately, it did not happen, and Summer came in, very dry. A vintage marked by drought. Not a single rain from June, until the exceptionally early Harvest, started on August 22nd, finished end of August (not seen before). A fantastic and unique vintage, branded with high concentration, very small yeast, and maximum quality. only 25-30 hl/ha, a very small yeast, for a collector Vintage!

Several parcel scattered on an elevated cool hillside. Rocky clay and limestone soil with exposition to East. Optimal sun exposition to benefit from the gentle morning light while being protected from afternoon heavy heat. Excellent aeration thanks to Valley de Soane's natural air flow.
