20 to 50 years old
Certified HVE. Tie up vines in fall, Guyot simple arched pruning in winter starting November, mechanical plowing in Vire Clesse, grass maintain between each row to stress roots to grow deeper, putting back dirt that was drained down the hillside, reset wire and stakes, plowing (April May), non systematic preventive organic treatments in Spring (very low dosage Bordeaux mixture), trimming of the top (non systematic), leave the leaves to prevent grapes from overheat, mandatory hand harvest in 20 Liters caskets.
Slow and gentle press of full cluster by pneumatic press. Alcoholic fermentation at 15° for 10 days average, malolactic fermentation on all cuvee at 20° for 2 month average. All cuvee are fermented in stainless steel tank. Aged on the lees for an extra 24 month.
Chardonnay 100%
Several parcel scattered on an elevated cool hillside. Rocky clay and limestone soil with exposition to East. Optimal sun exposition to benefit from the gentle morning light while being protected from afternoon heavy heat. Excellent aeration thanks to Valley de Soane's natural air flow.
